Is Succos the plural of Succah? Or do they just call it a succah because you use it for Succos?

Yes, it is the plural.

It's 4 walls and generally a bamboo roof but not a completely closed roof.

I have it on my deck which is about 12x25 and my succah is 8x16. Each panel is 2' wide, so it can be taken apart and stored all year round. Those look about 4x8 which is somewhat small.

The top cant have anything over it, I'm assuming that's in Isreal because of the staggered porches. It's not too windy this time of year there so it isnt really an issue. Every now and then if there's a hurricane or crazy wind you'll hear about or see a lot of collapsed Succahs, generally that are attached to the building as well.
